Personality:
It takes a decisive leader and a skilled pilot to man the Black Lion, and that's what the paladins of Voltron have in Shiro. Calm, commanding, and possessing piloting ability that made him a hero to many of Earth, he was a natural choice for the head of Voltron, and his fellow paladins seem to hold a universal respect for him. Older than the rest by several years at the least, he's formed a familial relationship with them, balancing the team when things fall out of whack, stopping squabbles (usually between Lance and Keith), and interrupting worry spirals (looking at you, Hunk and Pidge) before too much steam can build. Though he's usually serious, Shiro's also kind and sensitive, acting as a much needed ground when emotions run high, specifically where Keith is concerned (he seems to be about ninety percent of Keith's impulse control), and is especially protective of Pidge, particularly after realizing who she really was.
Did I mention that Shiro's also a huge dork? Because he totally is. Mister Serious Leader Guy is not above a well-timed food fight or debates over just what sound effects accurately represent the noise laser guns make (spoilers: Shiro's impression of lasers is terrible). He's also the obvious Space Dad to Allura's Space Mom, just as protective of her as he is of his fellow paladins and not afraid to argue with her when he thinks he has a point worth sticking by (more spoilers: Allura don't take no shit).
But here's the thing... Yes, Shiro is all those things I just listed, but nobody gets kidnapped by aliens for a year and comes out of it a-ok. There's just no way, especially when that time is filled with forced gladiator battles and torture/scientific experimentation. Granted, Shiro doesn't actually remember most of his time in captivity (for reasons that are as of yet unknown), but he knows enough, and more memories always seem to arise at the worst possible moments. It's not officially stated in canon, but it's incredibly obvious that Shiro is dealing with some form of PTSD, including intrusive flashbacks and distress when faced with individuals or circumstances associated with his time in captivity.
As extreme as his PTSD can be, Shiro manages to keep himself well restrained for the most part. He can endure incredible levels of stress during battle while leaving his teammates none the wiser (most of the time), making him a pretty decent actor. Good enough to fool Matt and a bunch of aliens into thinking he'd lost his damn mind after their capture, at least, so... yeah, pretty good. Unfortunately, that means no one notices his issues when he does have them until it's already too late to stop them, and when that trauma hits? Shiro tends to make irrational choices. When faced with Haggar, the Galra witch in charge of most of the nastier things done to him, he loses his cool completely, attacking in a rage rather than stopping to consider strategy or technique. When Sendak's mind games hit too close to home, Shiro panicked and literally jettisoned the problem into space... not that it really helped.
As I've probably made pretty obvious, Shiro has some pretty negative opinions of the Galra, as well as the "enhancements" given to him during his time held captive, and the short conversation he has with a podded Sendak (before the space-jettisoning) drags those issues into sharp relief. As soon as he's left alone with Sendak, Shiro gets a little... weird, demanding answers and referring to Sendak as a "broken soldier". There's none of the kindness that his team sees. No calm and no patience, because this isn't Shiro. This is the Champion, the damaged man who views Galra with only fear and loathing, and Sendak is quick to use that against him. Shiro's prosthetic arm is the strongest part of him, and yet he's disgusted at the thought of being Galra on any way. Panicked by the idea that maybe he's the broken one. Terrified that Sendak isn't the only monster in the room
Shiro's coming from a pull point partway through the final episode of season one with several pretty nasty problems on his mind. Allura has been kidnapped by the Galra (something he blames himself for entirely) and they've yet to save her, his team is barely holding up against the equivalent of dozens of Galra fleets, and he was very recently rejected by the Black Lion and has no idea why. Also, he's just been dropped right into a pretty nasty illusion courtesy of Haggar, so... he's kinda freaking the hell out.

Shiro is a natural leader, adaptable and enduring in spite of his PTSD. He regularly encourages his team, able to raise them from the depths of defeat with words alone, inspiring them to work together as one to win the day.
Tactics/Combat:
Shiro's no tech guru like Pidge, nor is he an engineering whiz like Hunk, but he's incredibly intelligent in his own right. Tactics are his strength, allowing him to emerge victorious from battles against much stronger opponents by analyzing their strengths and weaknesses and devising plans around their faults. It was that same attention to detail that allowed him to time the routes of the guards on the prison ship he was held on, eventually facilitating his escape.
Shiro is easily the most skilled of the paladins where hand-to-hand combat is concerned. He's strong, fast, and agile in battle, easily taking on multiple Galra sentries at once and holding his own in a fight against Sendak and his much larger prosthetic. It's reasonable to assume that he had some of those skills before he was captured by the Galra (what with being a military guy and all), but as an exploration pilot? I'm assuming most of those skills were honed during his year of captivity. Before and after pictures prove that his build is noticeably larger post-capture, most likely due to his time as a gladiator.
Piloting:
Shiro is a pilot of nearly legendary skill (at least on Earth), and he's no slouch when piloting his giant space lion either. He obviously won't be able to bring the Black Lion with him, but it's worth noting that of all the paladins (and in spite of that pesky rejection in the season finale), Shiro has the deepest connection with his lion, enabling him to see through the lion's body and senses.
Galra Enhancements:
Most of Shiro's right arm has been replaced by a Galra prosthetic. It seems designed to act as a permanent replacement, with no obvious extra ports or attachments that might allow for temporary removal. It's not clear how much feeling Shiro has in his right arm, but considering the advanced technology and how seamlessly the arm moves and functions, it's safe to assume that he has at least some perception of pressure and touch. The arm is incredibly strong and durable, taking head-on attacks from Sendak's much larger prosthetic with no visible damage to speak of. It also allows him to interface with Galra systems in spite of knowing almost nothing about Galra technology. Most impressively, his arm can emit a controlled, but very powerful energy that allows him to use his hand like some sort of energy blade, easily slicing through metal as thick as the hull of a space ship with barely any effort.
Though it's not clear at this point, it's entirely possible that Shiro's body contains other Galra enhancements that he's yet to discover/remember.
Items on your character:
Paladin armor/flight suit and his helmet. The paladin armor grants the wearer the ability to survive in the vacuum of space provided the helmet is present and functioning. Every paladin's armor also comes with a small jetpack on the back to allow for movement in space (and some limited lift while in a normal atmosphere), as well as energy shields that can be deployed from one arm. Shiro's jetpack is currently damaged and not functioning.
He also has his Galra arm, but that's kind of attached. Pretty hard to go anywhere without that.
